This high quality mat is made of glass fiber coated with food-grade silicone to provide excellent non-stick and baking qualities. Each

The circle patterns on the baking mat makes it easy to control the amount of batter. The outer ring of diameter 3.5cm is to make the traditional macarons size while the inner ring of diameter 1.5cm has two functions: a) baking "mini-Macarons", pretty fashion nowadays in France, or b) very useful to perfectly center your nozzle to fill the traditional macarons size.
